Harvested in autumn and stored in a temperature-controlled facility.
Cannot be used as seed ginger.

How to store ginger:
To prevent drying, wrap in plastic wrap or newspaper and store in a cool, dark place.
It can also be frozen. Slice thinly or grate, portion into small amounts with plastic wrap, and then freeze.

For those living in cold regions: We will ship at room temperature as is, but there have been instances of ginger freezing during transport.
