[How to Desalt]
Please desalt the salt-pickled bracken before cooking.
1) Rinse the bracken with water to remove the surface salt, taking only the amount you intend to eat.
2) Place the bracken and plenty of water in a pot and heat.
3) Once small bubbles start to appear from the bottom of the pot, remove from heat and let it cool as is.
Absolutely do not boil.
Do not cover the pot while cooling.
These are the key points.
If you boil it or cool it with the lid on, the bracken will become too soft.
4) Rinse the bracken with water once, then soak it in water in a container.
Soak in water for half a day to overnight, changing the water several times.
The desalting is complete when you can lightly bite into it and the salt has been removed.
