Water spinach is a leafy vegetable belonging to the morning glory family, related to sweet potatoes, and is eaten stir-fried or blanched. Native to tropical Asia, it prefers high temperatures and humidity, is heat-tolerant but not cold-tolerant, and is treated as an annual in Japan.

Water spinach is rich in both Vitamin B1 and Vitamin B2, so consuming it can help relieve fatigue. Vitamin E, like beta-carotene, is a nutrient with antioxidant properties. It can help prevent lifestyle diseases such as arteriosclerosis and myocardial infarction, as well as prevent the appearance of age spots and wrinkles on the skin, which can make you look older.

?? Harvesting

Harvest the entire plant when it reaches about 30 cm in height.
Alternatively, when the plant is about 20-25 cm tall, harvest the tips, leaving 3-5 nodes from the base.
Afterward, as side shoots grow, harvest them sequentially. Frequent harvesting of side shoots will encourage the plant to branch out and grow vigorously.
