Why not try growing them yourself?
[Features]
Aso Takana is a rare variety of mustard greens characterized by its thin stems and crisp texture.
Not only the stems but also the leaves are delicious.
Since they are rarely sold in stores, I grow them myself and collect the seeds.
Harvesting has traditionally been done using a method called Takana-ori (mustard green folding). It's a manual process without machinery, where the tender parts of the stems are individually folded by hand during harvest.
Harvesting is done by directly checking the best parts, which can only be determined by human senses.
This harvesting is often seen in early spring and is called Takana-ori in Aso.
[After Harvest]
Because the stems are thin, there is no need to sun-dry them before pickling.
They are salted and pickled on the same day they are harvested from the field.
[If you don't have a barrel, you can easily make them by putting the takana and salt in a ziplock bag, placing a heavy object like a plastic bottle on top, and refrigerating it.]
Add chopped chili peppers to your liking.
They are ready to eat in about 4 to 10 days, when they start to release moisture.
If they are too salty to eat as is, rinsing them with water will make them more palatable.
While they are delicious as pickles, they are even more delicious when mixed into stir-fries, fried rice, ramen, pasta, or other stir-fried dishes.
They can also be frozen.
?? [Caution]
The seeds listed are carefully collected, but as I am not a seed shop, there may be some small husks mixed in. We appreciate your understanding.
We recommend storing the seeds in a cool, dark place or in the refrigerator until sowing time.
I also have rice and other items for sale, so please take a look! (o^^o)
