This is a petty knife from Hattori Nutrition College.
I purchased it on Mercari stating it was unused, but I am listing it because I have no plans to use it. It has not been sharpened. The blade length is approximately 125mm.
There are some minor sharpening scratches, so I don't believe it's completely unused, but the condition is very good. The blade length has also hardly diminished.
This is a petty knife manufactured by Sakai Toshi.
It has a bee mark, so I believe it is a relatively new type of petty knife from Hattori Nutrition College.
I have continued to use a petty knife of this same type even after retiring as a chef. I believe this item can easily last for 10 years.
It is made of stainless steel, but I am not sure of the specifics. I think it is likely molybdenum steel.
