This is a Gyokinkane Gyuto knife.
The shop has been out of business for a long time, so I don't think you can easily find it in stores anymore.
It's made of steel, so it will rust, but it cuts very well.
Also, although it's a Western-style knife, the balance point is slightly forward of the heel, so the weight of the blade helps it cut into ingredients.
I bought this because I heard that forged steel Gyuto knives were becoming harder to obtain, but I've finally managed to get the thick-bladed Kyugen Gyuto I was looking for, so I'm putting this one up for sale.
As it is an old item, there are dull spots, rust, etc.
