Used refurbished genuine Deba knife 178mm
This is a refurbished, used Masamoto Deba knife. It has been electrically polished to remove rust and stains, so there are polishing marks.
It appears to be from an older era, as it is not stamped with Tsukiji or Sohonten.
Compared to modern knives, it has a more curved spine with a gentle arc across the entire back. Personally, I find this shape easier to use.
The steel type is unknown, but it feels and cuts similarly to a standard Masamoto Deba, so it is likely White Paper No. 2 steel.
The handle has a nice white buffalo horn ferrule with no blemishes. While white buffalo horn is often used for high-end knives these days (as it is apparently rare), it was present in a certain percentage of knives until recently.
The blade has a standard sharpening with a wire edge. I've added a slight bevel to the inside of the heel for a more comfortable grip.
The blade is set up for sharpness, more so than a typical Deba, so those who use it heavily for work may want to add a micro-bevel as needed to prevent chipping.
The maintenance performed was primarily functional restoration (rust removal, blade line correction). Please understand that cosmetic polishing has not been done.
Deep rust marks may remain as pitting, and there are minor chips on the very edge. Therefore, please refrain from purchasing if you are looking for a pristine item.
The knife has been sharpened for use, but the final edge geometry and angle are up to the user. Please purchase only if you are able to perform your own maintenance and adjustments.
Blade length: approx. 17.8 cm
Blade width: approx. 4.5 cm
Steel thickness at heel: 7.4 mm
Steel thickness at tip: 2.9 mm
Weight: 236g
Shipping will be via Yu-Packet.
