Koyanagi Sangyo - Made in Japan
Iroribata Umami Bonito Flakes Shaver with Fujihide Blade
A professional-grade shaver featuring a box made of ash wood and a plane base made of oak.

The Fujihide bonito plane blade is a steel-bonded blade, which ensures excellent sharpness.
The shaving experience is gentle and smooth.

This product uses the same ash wood for the box and Fujihide blades as the Katsuo-bako Katsuo no Sato, but the box is smaller and the plane base is made of oak.

The shaved flakes can be used as a natural topping for rice or added to miso soup to enhance the flavor – highly recommended!
The flower shaped shavings are a perfect accompaniment to tofu or blanched vegetables! Also highly recommended for egg-on-rice.

Bonito flakes are divided into Osebu (male/back side) and Mese (female/belly side).
One bonito yields a total of 4 bonito flakes: Osebu x2 and Mese x2.

Osebu (Male/Back Side)
Bonito flakes from this part have a relatively mild flavor and are consistent in taste.
Easier to shave for those new to using a shaver.

Mese (Female/Belly Side)
This part is fattier due to being from the belly, and can easily turn into powder when shaved.
However, many people prefer the taste of Mese, so please enjoy shaving and tasting it as well.

We encourage you to experience the distinct flavors of both Osebu and Mese.
