KIDASHI Shichirin made from natural diatomaceous earth.
This is a luxurious item with unquestionable craftsmanship and performance, a purely domestic KIDASHI Shichirin meticulously carved by artisans using chisels.
While pressed (kneaded) shichirin made from Noto's diatomaceous earth are common, this is a genuine KIDASHI shichirin, offering exceptional charcoal longevity, far-infrared effect, insulation, durability, and superior grilling results.
Due to the Noto Peninsula earthquake on New Year's Day, this item is no longer available.
How about it for those who love it, collectors, or as a backup?
We hope that even those who have never used one will consider this authentic shichirin that makes food exceptionally delicious.
Diatomaceous earth is soil (soft rock) formed by the accumulation of dead plant plankton (diatoms).
While three-quarters of the Noto Peninsula is composed of this diatomaceous earth, only certain areas, such as Suzu City, can actually be excavated.
There are two types: KIDASHI Shichirin, which are carved from excavated blocks of diatomaceous earth and fired, and Neri-mono (kneaded products), which are made by crushing diatomaceous earth, mixing it with other clays and sawdust, and molding it with a die before firing.
KIDASHI Shichirin are made by directly cutting from the diatomaceous earth layer and shaping the block without crushing it, then firing. This preserves the air pockets within the diatomaceous earth, resulting in excellent insulation and maximizing charcoal combustion. The chisel marks left by the artisans are also beautiful.
The history of diatomaceous earth KIDASHI Shichirin, made exclusively in Okunoto Suzu City, can be traced back to the Muromachi period.
The diatomaceous earth layer in Suzu City is said to have been deposited 20 million years ago and is characterized by its uniformly deep layers.
The excavation method is called the KIDASHI method because tunnels are dug into this diatomaceous earth layer.
Artisans meticulously craft these grills.
